Seared Salmon, shaved fennel and chilly vinaigrette salad

I don't usually eat salads and being a new just moved out parents place/omgomgomg I'm an SUCH an independent magical 20 year old living by myself ALL THE FREEDOM. I realised that I have had NO vegetables in my diet. My dad was a serious vegetarian so we MUST stuff our faces with vegetables at home and no junk food certainly no take aways etc etc. So as you can imagine when I moved out there were doritos everywhere and timtams in every drawer. It was a whole new world for me and I was starved! haha Well I decided to break than chain and make ACTUAL food because I AM IN LOVE WITH FOOD. So heres one salad that I made for myself and Ive also included the recipe and method :)


Seared Salmon, shaved fennel and chilly vinaigrette

Ingredients:

  • Fresh salmon: 100g
  • Tomatoes: 1
  • Green beans: 100g
  • Fennel bulb: 50g
  • Red onion: 40g
  • Kalamata olives: 5
  • Coral lettuce: 20g
  • Spring Onions: 1 ea
  • Olive oil: few drops

Vinaigrette:
  • Oil: 10ml
  • Dried Chilli flakes: pinch
  • Garlic cooked: 1/2 clove
  • Cider vinegar: 10ml
  • Fresh lemon juice: 1tsp or to your preference
  • Light soy sauce: 20ml
  • Seasoning (salt&pepper
Method:

  1. Trim salmon skin off
  2. Top and tail beans
  3. Peel and de-seed tomato, cut into fingers
  4. Clean fennel, slice thinly
  5. Thinly slice red onion
  6. Pit olives
  7. Wash and dry coral lettuce and spring onions
  8. Prepare dressing
  9. Sear salmon in very hot pan, done ness is to your preference :)
  10. Combine all ingredients in a bowl
  11. Add Vinaigrette onto the ingredients in bowl
  12. place salmon on top of salad
